When you see garlic in the grocery store, it has been sitting for about 3-6 weeks curing. The purpose of this is so that the spice/"kick" of the garlic isn't so pungent and they hold a longer shelf life.
We didn't make time to cure ours so you will be receiving your garlic about 1 day to 1 week post harvest date. Feel free to cure them yourself by hanging them to air dry in a dark dry place with plenty of air or eat them fresh as is. All parts of the garlic can be used in a way. Roots will be trimmed but not completely removed. We had to harvest our garlic early due to unforseen circumstances so the bulbs are very small. Still the same great taste. $8/bunch. About a 1lb bunch.
Bulbs are good for sauting and drying while the leaves and steams are good for soups and salads. Enjoy!
